How To Make Delicious Baileys Chocolate Truffles

Making your own sweet treats maybe one of the most popular hobbies for many since lockdowns started. Holidays are the perfect occasion to show your new skills. With Easter just a few days away, here is our chocolate candy recipe to make your own chocolate gifts. Baileys is probably the best invention besides chocolate. We love it and like to use it in our coffee, hot chocolate or dessert.  These Baileys Irish Cream Chocolate Truffles are deliciously rich and totally irresistible. 

Ingredients: 

  • 200 g / 7 oz Dark Chocolate (e.g. Vivani Organic Couverture 70%)
  • 56 g / 1/4 cup Unsalted Butter
  • 120 ml / 1/2 cup Heavy Whipping cream
  • 70 ml / 1/3 cup Baileys Irish Cream
  • Unsweetened Cocoa Powder 100 % cocoa for coating (e.g. Dr. Oetker)

Method:

Put the chocolate and butter in a heat ­proof bowl, and melt over bain­ marie. Set aside and add the butter stirring until smooth and homogeneous. Stir in heavy whipping cream and Baileys until fully incorporated. Refrigerate for 2 hours or overnight until chocolate mass is hard enough to roll into balls. Use a teaspoon or a melon ­baller to scoop out the truffles and form into 3 cm / 1 inch) balls. Roll the balls in cocoa powder and refrigerate for at least half an hour before serving. The chocolate mass makes approximately 25 truffles.

Be aware it is a bit of a messy affair forming the truffles, but rest assured the result is well worth it.
