We love mug cakes because they are so easy to make and most of the time we have all the ingredients in our kitchen cupboards. Today we share with you our fall favorites. Let's bake some cake!
1. Bailey's Irish Cream Mug Cake
Ingredients:
- 5 1/2 Tbsp. All-Purpose Flour
- 2 Tbsp. Sugar
- 1/8 Tbsp. Baking Powder
- 1 Egg
- 3 Tbsp. Bailey's Irish Cream
- 3 Tbsp. Vegetable Oil (e.g Sunflower)
Method:
Whisk together all ingredients in a microwave safe cup. Microwave for 1 1/2 minutes adding an additional 30 seconds if not done. Serve warm.
2. Ginger Latte Mug Cake
Ingredients:
- 2 Tbsp. Strong Brewed Coffee
- 1/4 Tsp. Ground Ginger
- 1/4 Tsp. Cinnamon
- 1 Tbsp. Molasses
- 4 Tsp. Sugar
- 1 Egg
- 3 Tbsp. Vegetable Oil (e.g Sunflower)
- 3 Tbsp. Low Fat Milk
- 5 1/2 Tbsp. Flour
- 1/8 Baking Powder
Method:
Whisk together all ingredients in a microwave safe cup. Microwave for 1 1/2 minutes adding an additional 30 seconds if not done. Serve warm.
3. Carrot Mug Cake
Ingredients:
- 6 Tbsp. All-Purpose Flour
- 2 Tbsp. Brown Sugar
- 1/4 Tsp. Salt
- 1/4 Tsp. Baking Powder
- 1/8 Tsp. Cinnamon
- 1/8 Tsp. Nutmeg
- 6 Tbsp. Buttermilk, chilled
- 2 Tbsp. Vegetable Oil (e.g. Sunflower)
- 1/4 Tbsp. Vanilla
- 3 Tbsp. Carrots, grated
- 1 Tbsp. Almonds, chopped
- 1 Tbsp. Raisins, chopped
Method:
In a small bowl, add the first 6 ingredients and mix well with a fork or whisk. In a separate bowl add the remaining ingredients except the almonds and raisins and mix well using a spoon. Add flour mixture to the liquid ingredients and mix well. Stir in almonds and raisins. Pour batter into mug and microwave for 2 to 2 1/2 minutes and allow it to set for 30 seconds. Enjoy!
4. Pumpkin Cake In A Mug
Ingredients:
- 1 Egg
- 2 Tbsp. Low Fat Milk
- 1/4 Tbsp. Vanilla Extract
- 1/4 Cup Pumpkin Puree
- 7 Tbsp. All-Purpose Flour
- 1/4 Cup Brown Sugar
- 1/4 Tsp. Cinnamon
- 1/4 Tsp. Allspice
- 1/4 Tsp. Salt
Method:
Mix all ingredients in a medium bowl. Pour mixture into mug and microwave on full power for 1 1/2 minutes. Check for spillage and cook an additional 1 1/2 minutes. Enjoy!
5. Sweet Potato Mug Cake
Ingredients:
- 1 Tbsp. Ground Flax Seeds
- 1/4 Cup Water
- 1/4 Cup Mashed Cooked Sweet Potatoes (alternative Sweet Potato Baby Food)
- 2 Tbsp. Rice, Soy or Almond Milk
- 1/4 Tsp. Pure Vanilla Extract
- 1/4 Cup Brown Sugar
- 7 Tbsp. Self-Rising Flour
- Pinch of Salt
- 1/2 Tsp. Cinnamon
- 1/2 Tsp. Nutmeg
- 1/2 Tsp. Ground Ginger
- 3 Tbsp. Toasted Pecans or Walnuts, chopped
Method:
In a bowl, mix together the first 2 ingredients with a fork and set aside for 5 minutes to thicken. Stir in the sweet potato, soy milk, vanilla and sugar. Add the flour, salt and spices. Fold in the nuts. Divide the batter between two mugs. Microwave separately for 1 1/2 - 2 1/2 minutes each until risen and firm. Enjoy!
