What Are Cinnamon Stars?

Cinnamon Stars, also known as Zimtsterne in German, are traditional Christmas cookies. The cookies are made with ground almonds, sugar, egg whites, and cinnamon. These simple ingredients come together to create a flavorful and aromatic, gluten-free cookie that is perfect for the holiday season. The dough is rolled out and cut into star shapes before being baked to perfection.

Ingredients:

  • 300 g / 10.58 oz Ground Almonds
  • 150 g / 5.29 oz Icing Sugar
  • 1 tsp. Cinnamon
  • 2 drops of Rum flavoring (optional)
  • 2 Egg Whites

Decoration:

  • 1 Egg White
  • 100 g / 3.52 oz Icing Sugar

Method:

In a bowl, mix the ground almonds, icing sugar, cinnamon, egg whites and rum aroma until well combined. Cover the bowl and place it in the refrigerator for 1 hr.

In a separate bowl, start whisking the egg whites. Sift the icing sugar and gradually add it to the egg whites. Whisk the mixture until frothy. Pour the mixture into a small bowl, cover it and refrigerate until ready to use.

Sprinkle the work surface with icing sugar and roll out the dough, preferably covered with a sheet of baking paper, to a thickness of 1/2 cm (0.2 in). Cut out star shapes using a cookie cutter.

Place the cinnamon stars on a baking tray lined with parchment paper and brush them with the beaten egg whites using a small knife. Preheat the oven to 140 degrees C (284 F). 

Bake the Cinnamon Stars for approximately 20 to 25 minutes until they are lightly golden around the edges.

Tips For Success

Make sure to let the dough rest before rolling it out to ensure the cookies hold their shape. Dust your work surface and rolling pin with powdered sugar to prevent sticking.
