Trifle has it's origin in English cuisine and is referred to a dessert made with fruit, a layer of sponge cake that was soaked in Sherry and custard. Over time this classic dessert has evolved and it can be made with our without alcohol. Trifle is a delightful dessert to finish a meal and it is hard to resist this sweet temptation.
Cranberries are perfect in the combination with chocolate and thus we have recently made this chocolate trifle. The ruby-red berries are popular during the holiday season but they are healthy and delicious all year round.
Ingredients:
- 200 g / 1 1/3 cups Fresh Cranberries
- Water
- 1 Tbsp. Mulled Wine Spice Mix (Cinnamon, Cardamom, Ginger, Star Anise, Gloves)
- 50 ml / 1.7 oz Maple Syrup
- 3 Eggs
- 150 g / 1 cup Custard Sugar
- 200 ml / 6.8 oz Milk (1.5% fat)
- 60 g / 1/2 cup Wheat Flour
- 20 g / 1/8 cup Unsweetened Cocoa Powder 100%
- 20 g / 1/8 cup Chocolate Pudding Powder
- 100 g Dark Chocolate Bar / 3.52 oz (e.g. Lindt Excellence 70%, Single Origin Chocolate)
- 150 g / 1 cup Whipped Cream
Method:
Put cranberries with a bit of water, maple syrup and spice mix in a sauce pan and boil until the cranberries pop for approx. 5 to 10 min. Once done let the cranberries cool down. Mix eggs with 75 g (1/2 cup) of Custard Sugar until sugar is dissolved. Add flour and cocoa powder and mix the dough until it is smooth. Place parchment paper on a small baking tray and spread the dough evenly. Bake in the oven for approx. 20 min at 180 C / 356 F. In the meantime mix chocolate pudding powder with the remaining custard sugar and milk. Bring to a boil and simmer over low heat until chocolate pudding is done. Chop the chocolate bar into small pieces and add it into the hot chocolate pudding. Stir until the chocolate pieces are completely dissolved. Whip the cream and add it slowly to the pudding mixture. Once the chocolate cake has cooled down cut it into squares.
Now you are ready to put the dessert together. Place approximately one table spoon of cranberry compote into a dessert glass. Add chocolate cake and chocolate mousse. Decorate the dessert with another piece of chocolate cake and cranberries. Enjoy!
