The Chocolate Molton Cake or Chocolate Lava Cake is probably one of the most favorite desserts with its rich chocolate flavor. It seems that Chef Jean-Georges Von Gerichten has invented the dish although that claim was disputed by chocolatier Jaques Torres. Regardless of who invented this dessert it is simply delicious. These Chocolate Lava Cupcakes are very simple and easy to make.
Ingredients:
- 225 g Dark Chocolate (minimum 60% cocoa content)
- 115 g Soft Butter
- 100 g Sugar
- 1 Tea Spoon Vanilla Sugar (optional)
- 35 g Flour / Spelt Flour
- 4 eggs
- 2 Table Spoons Unsweetened Cocoa Powder (optional)
- Pinch of Salt
Serves: 12
Method:
Place the chopped chocolate with the butter in a sauce pan and melt the mixture over low heat until smooth. In a bowl mix flour, sugar and vanilla sugar and add the eggs to the mixture one by one. Whisk the mixture well. Quickly fold the chocolate into the mixture and whisk together until smooth. Butter the sides of the muffin molds and pour the cake mixture into the molds. Bake for 10 to 11 minutes at 190 degrees Celsius, or until the sides of the cakes are firm but the centers are soft. Let the cakes cool down for 1 minute before serving them. Sprinkle cocoa powder or cocoa nibs on top. We serve them with fresh fruits and vanilla ice cream or frozen yogurt. Bon Appetit!
