- 250 ml / 9 oz Organic Coconut Milk (canned Coconut milk)
- 100 g / 3.52 oz White Chocolate Couverture finely chopped
- 30 g / 2 tbsp Caster Sugar (optional)
- 2 - 4 tsp Instant Gelatin Powder
- 200 ml / 7 oz Fresh Mango Juice
- 200 g / 7 oz Mango chopped for topping
- Toasted Coconut Flakes for garnish
Method:
1. In a saucepan, heat the coconut milk, white chocolate, and the sugar over medium heat. Stir gently until the sugar is dissolved and the chocolate is thoroughly melted.
2. Remove from heat and let it cool slightly.
3. Sprinkle the gelatin powder over the mixture and whisk until completely dissolved.
4. Pour the mixture into individual serving glasses and refrigerate for at least 1 hour or until set.
5. In the meantime, puree the diced mango in a blender until smooth.
6. Once the panna cotta is set, pour the mango puree into a small saucepan, add 1 or 2 tsp of instant gelatin powder and mix it until fully resolved. Divide the mango puree evenly between each glass.
