It's here - it's blueberry season. During the berry season between July and September you can visit blueberry farms in Germany and pick your own straight from the bush. We haven't been to one yet, but it is on our list. Nevertheless, we enjoy seeing the supermarket shelves stocked with it. Blueberries are found in many cake varieties and combining it with red wine was a real winner. If you're looking for a delicious, seasonal, berry cake to impress your guests, then this blueberry red wine cake is perfect.
Ingredients Dough:
- 100 g / 3.52 oz All Purpose Flour
- 1 tsp. Baking Powder
- 100 g / 3.52 oz Sugar
- 2 Eggs (medium size)
- 100 g / 3.52 oz Soft Butter
- 100 g / 3.52 oz Dark Chocolate Bar (e.g. Ritter Sport)
Ingredients Red Wine Cream:
- 6 to 8 Sheets Gelatin
- 200 g / 7.05 oz Cream Cheese
- 200 ml / 7.05 oz Whipping / Heavy Cream
- 30 g / 1.05 oz Sugar
- 150 ml / 5.07 oz Red Wine
Ingredients Topping:
- 300 g / 10.6 oz Fresh Blueberries
- 1 Packet Dr. Oetker Clear Cake Glaze (sugar free)
- 1 tbsp. Sugar
- 125 ml / 4.22 oz Red Wine
- 125 ml / 4.22 oz Water
Method:
Pre-heat oven to 180 C / 356 F. Mix flour and baking powder in a mixing bowl. Add sugar, eggs and butter and whisk with a hand-held mixer until all ingredients are fully combined. Pour dough into a springform cake pan and bake for approx. 20 min. Once done let the cake base cool down.
Chop chocolate bar and melt slowly over hot water bath. Spread a thin layer of chocolate onto the cake base. Let it dry.
Prepare gelatin according to the instructions given on the packet. Pour half of the red wine into a sauce pan, add sugar and dissolve it over medium heat. Do not boil the wine. Add gelatin to the red wine, stir it gently to dissolve it. Pour the remaining wine into the mixture and set aside.
Mix cream cheese with sugar and gently stir it with a hand-held electric mixer. Whip the cream in a second bowl until soft peaks emerge. Fold the whipping cream into the cream cheese. Gently add the red wine mixture to it and spread it evenly on the cake base. Place the washed blueberries on top.
Prepare the cake glaze with sugar, red wine and water. Evenly coat the cake with it. Place the blueberry red wine cake into the refrigerator for approximately two hours. Remove the springform cake pan and enjoy this berrylicious cake.
